Prosciutto Wrapped, Gorgonzola Stuffed Dates

  • 8 Whole dates
  • Package prosciutto (4 slices), sliced lengthwise
  • Gorgonzola cheese
  • 2 tablespoons honey, or truffle honey


  1. Preheat oven to 375°F.
  2. Cut one side of the dates, and with a pair tweezers remove the pit and stuff with Gorgonzola cheese.
  3. Wrap each date in a strip of prosciutto.
  4. Place on an oven-safe wire rack that is placed on top of a foil lined sheet pan and bake for 15-20 minutes.
  5. Place prosciutto wrapped dates on a platter and then drizzle on some honey. Server any extra honey-balsamic on the side.
